summer tea, three ways
We’re having a very hot week here in NYC, so I wanted to share some of my favorite ways to enjoy our teas in the summer without steaming up the kitchen! Superbly simple, these techniques can be used on a variety of tea blends, so you can always have something cool on hand to revitalize and refresh. Enjoy!
ice-brewed green glow elixir
a deeply green blend of sencha, matcha and spearmint. a refreshing and energizing sip for hot days, especially brewed with ice, which brings out the most delicate nuances of the blend.
how to brew it, above, clockwise from top left:

fill your cup with freshly made ice, sprinkle tea over the top

let ice melt at room temperature

as the water level goes down, top up with more ice until the cup is full

let the second addition of ice mostly melt
-
strain into a fresh cup

enjoy!
cold-brewing with our limited-edition summer blend
a magical melange of bao zhong oolong, roses, tulsi, lemon balm and a hint of bergamot. bright, floral and refreshing!
how to brew it, above, clockwise from top left:
measure your tea into a glass jar with a lid

(optional) splash a little hot water over the leaves to activate them, otherwise simply fill the jar with cool water

if using a little hot water, fill the remainder of the jar with cool water

twist on the lid + refrigerate for a few hours or overnight, according to your preferences

strain into a cup, over ice, if desired

strained tea can be stored in the fridge for another day or so, but it doesn't usually last that long at our house!
fleurs + cacao iced latte
a luxurious blend of roses, jasmine and chocolate, finished with a hint of sweet vanilla
how to brew it, above, clockwise from top left:
measure your tea into a glass vessel, a jar or a pyrex measuring cup works well

I like to double the quantity of tea for making iced lattes, so I used 4 tsp tea for 16oz water at 180F, brewed for 3 minutes

strain into another jar or measuring cup, add a spoonful of raw honey and stir to dissolve

chill the blend overnight (or for a few hours) in the fridge

when tea is fully chilled, fill your cup with ice and add tea to about ¾ full (or as desired)

top up with the milk of your choice and enjoy!
A particularly beautiful moment in the native plant beds these past few weeks. Delicate shades of pinks and purples before the golden blaze of the late summer goldenrods and sneezeweeds.
